Cheesy Chicken Manicotti ​

Ingredients

  • 1 Box Manicotti Noodles. Don’t pre-cook the noodles
  • 1 Bag String Cheese, enough to fill each noodle
  • 1 Jar 24oz 3 Cheese Pasta Sauce
  • 1 Jar 22oz Garlic Parm Alfredo
  • 1 Rotisserie chicken, shredded or 3 Breast Shredded
  • 2-3 Cups Shredded Mozzarella Cheese

Directions

    1. Preheat oven to 400 degrees
    2. Put the whole box of Manicotti noodles in an 8×13 pan
    3. Stuff the Noodles with 1 string cheese each
    4. Add both jars of pasta sauce & alfredo to the top of the noodles
    5. Add Shredded Chicken to the top of the sauce
    6. Top with shredded cheese
    7. Cook for 45

**Serve with Garlic toast

Pea Soup- Cheater Style

Ingredients

  • 1 ham bone
  • 1 bag dried peas
  • 1 quart chicken bone broth
  • 2 dozen baby carrots (I put them in whole)
  • 1 can Campbell’s French Onion Soup can of water or 2
  • Danos. Sea salt (A good sprinkle-tsp or so)
  • 1 tsp smoked paprika
  • 2 bay leaves

Directions

    1. Place in the instant pot- high pressure for 10 minutes, then quick release.
    2. Add 1 diced onion and 2/3 to 1 cup of dehydrated hash browns.
    3. Simmer for 10 minutes. 
    4. Serve and Enjoy!

Kielbasa Soup

Ingredients

  • 1 TBSP Olive Oil
  • 14-16 oz Kielbasa Sausage (sliced into bite-sized pieces using a fully cooked variety)
  • 1 medium onion, finely diced
  • 2 carrots sliced into rounds or half rounds (depending on size)
  • 2 celery ribs (sliced or diced)
  • 3 garlic cloves, minced
  • ½ tsp dried oregano
  • ¼ tsp dried thyme
  • ¼ tsp black pepper
  • Pinch Rosemary
  • 6 Cups chicken broth
  • 1 pound small red potatoes cut into bite sized pieces
  • 1.5 pound green cabbage chopped into bite-sized pieces

Directions

    1. Heat the olive oil in a large pot over medium heat. When the oil is hot but not smoking, add the sausage. Cook the sausage for 2 minutes, stirring frequently.
    2. Add the onions, carrots, and celery to the pot. Cook the vegetables for 3-4 minutes, stirring frequently. 
    3. Add garlic, oregano, thyme, black pepper, and rosemary. Cook for 1 minute, stirring frequently. 
    4. Add the chicken broth and stir, while gently scraping any bits off the bottom of the pot. Raise the heat to high and bring the broth to a boil. Lower the heat to medium-low, cover, and simmer the soup for 10 minutes. 
    5. Add the potatoes and chopped cabbage to the soup.
    6. Raise the heat to high and bring the cabbage soup to a boil. Lower the heat to medium-low and cook for 10-15 minutes or until the potatoes are fork tender and the cabbage is wilted. Keep the soup at a simmer and stir occasionally. 
    7. Taste and add salt as needed.

Hamburger Gravy

Ingredients

  • 1-3 Lbs ground beef (depending on how many people you’re trying to feed or if you want leftovers).
  • Soy Sauce
  • Beef Gravy (1-3 jars- to match the number of lbs of beef)
  • Mashed potatoes

Directions

  1. Brown the meat and drain. 
  2. Add beef gravy, 1-3 jars depending on how much hamburger you used. Stir it up.
  3. Add soy sauce. I don’t measure, just add until the mixture turns a darker color.
  4. Serve over mashed potatoes. 

**Optional- Serve with buttered bread on the side.

**Substitution: This also works with chicken. Just substitute the hamburger for chicken breast and the gravy for Cream of Chicken soup, leave out the soy sauce.

Picadas

Ingredients

Ingredients: Maseca flour, water , salt, cheese

Directions

In a bowl you can do 3 cups of maseca ( makes about 10) 3 cups of warm water and a teaspoon of salt mix until you get a nice soft dough once done gather a small/ medium size amount and make into a ball on a Ziplock bag or parchment paper place the dough in the middle and flatten with hands or a flat plate you don’t want it to be super thin keep a little bit of thickness after place it in a flat pan and let it cook on both sides for about 1 to 2 mins once done pinch the edges and fry in oil and add your shredded cheese I prefer queso fresco, you can also put beans or meat on them up to you.

Creamy Beef and Cheese Tortellini

Ingredients

  • 1-lb Ground Beef
  • 1 Jar Spaghetti Sauce
  • 1 Block Cream Cheese
  • 1 Bag Cheese Tortillini
  • 2 Cups Mozzarella Cheese (Measure with your heart)

Directions

  1. Brown beef until fully cooked
  2. Pour 1 jar spaghetti sauce over the beef in the same pan
  3. Add one block of cream cheese to the beef and spaghetti sauce mixture. Mix and heat on low for a few minutes.
  4. Pour mixture into oven-safe bowl with tortellini, mix.
  5. Cover with mozzarella cheese and place into the oven at 375 degrees until the cheese is melted
  6. Serve hot with cheese bread!

Chicken Wild Rice Soup

Ingredients

  • 3 cups cooked wild rice  
  • 1 carrot- diced 
  • 1 rotisserie chicken (or 1 cup of chicken)
  • 1 onion-diced
  • 1 stock of celery- diced
  • ½ cup of butter
  • 8 cups chicken broth 
  • 1 cup  of half & half
  • 1 cup of flour
  • Salt & pepper to taste 

Directions

  1. Cook rice 
  2. Sauté butter, carrots, celery, chicken, and onion until vegetables are soft.
  3. Stir in flour- do not let mixture brown
  4. Add chicken broth slowly, stirring constantly until mixed well
  5. Add wild rice & seasonings to taste
  6. Bring the mixture to a boil
  7. Add half and half and stir, reheat, but do not boil 

**Serve with French bread 

Beef Tips

Ingredients

  • 2 lbs of stew meat 
  • 10.5 oz cream of mushroom soup 
  • 1 package of brown gravy mix
  • 1 package of Lipton dry onion soup mix
  • 4 oz sliced mushrooms (optional)
  • 1 cup of water

Directions

  1. Add stew meat to a 9 X 13-inch pan 
  2. Mix the soup, gravy, soup mix, and water and pour over the meat, stir together
  3. If you add mushrooms, add them last and stir again 
  4. Cover with foil and bake at 300 degrees for 3 hours 

**Do not uncover or peek until done!
**Serve with egg noodles, rice, or mashed potatoes 

Banana Bread

Ingredients

  • 2 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt 
  • ½ cup butter and 1 cup sugar, mixed- should be a creamy texture(slightly heat the butter if not soft)
  • 2 eggs 
  • 1 tsp vanilla
  • 3-4 big bananas, mashed
  • Optional— 1 cup walnuts or chocolate chips

Directions

      1. Mix all ingredients together 
      2. Pour into 3 small loaf pans or 2 larger ones
      3. Bake for 1 hour at 325 degrees

Crockpot Kielbasa Cheesy Potatoes

Ingredients

  • 1-lb smoked sausage (beef Kielbasa)
  • 2 bell peppers
  • 1 onion
  • 1 regular-size bag of frozen, shredded hashbrowns
  • ¾ Cup heavy whipping cream
  • 1 can cheddar cheese soup
  • ½ Cup sour cream
  • 1 packet of ranch seasoning
  • 1 Cup shredded cheese

Instructions

      1. Slice kielbasa, bell peppers, and onion, and sauté 
      2. Add meat mixture, frozen hashbrowns, whipping cream, cheddar cheese soup, sour cream, ranch seasoning packet, and 1 cup of shredded cheese into crockpot
      3. Cook on high for 2 hours or low for 4 hours.

  • Example- “No Rizz” would mean someone has no flirting skills

Cringe

  • Something is embarrassing, awkward, or someone is trying too hard. It gives you the ick, like you have secondhand embarrassment. 
  • Example- “He’s acting cringe.”

Slay

  • You did something amazing or looked amazing. 
  • Example- “You slayed that outfit.”

Clocked

  • You won an argument, humbled someone, or put them in their place. You saw it, realized it, or caught something. 
  • Example- “Mom clocked me taking her last candy bar.”

Drip

  • Fashionable- someone’s style, swag, or clothing. 
  • Example- “No drip,” meaning someone has no style. This can also be used when someone “copies” your outfit

Brochacho or Brochacha

  • “My bro, my dude, or my friend.” 
    1. Brochacho- Used to describe a male friend. 
    2. Brochacha- Used to describe a female friend.

ICL

  • Abbreviation for “I can’t lie.” A way of introducing their honest opinion. 
  • Example- “ICL, I studied all night long.”

Ganglish

  • A playful, casual, or “cool” way of speaking English that mixes slang, internet language, and local phrases.

Slay Aura

  • Your vibe or energy is powerful, confident, and captivating. 
  • Example- “His slay aura is unmatched,” meaning, he has crazy cool energy.

  • Slay- do something amazing
  • Queen behavior- display confidence and self-respect
  • Slay Queen- Usually used to describe a female who is confident, bold, and is not affected by others’ opinions. 
  • Example- “You stood up for yourself, slay queen,” meaning she was strong and confident. 

Cooked

  • Done, defeated, or embarrassed- or someone was roasted, humiliated, or destroyed.
  • Example- “Bro got cooked in that debate,” meaning he got roasted or lost the debate badly

Lit

  • Exciting or fun.
  • Example- That party was lit.

Fanum Tax

  • Used when taking someone’s food but used in other random contexts.

Bet

  • Okay, alright, or deal.
  • Example- “You’re making dinner tonight.” “Bet.”
